Ingredients:
- 4 Corte’s Chouriço Caseiro Links (Sliced Into Thin Slices).
- 2 Large Chicken Breasts (Split And Skinned).
- 3 Cloves Of Garlic.
- 2 Red Peppers (Sliced).
- 1 Large Onion (Chopped).
- 4 Tsp Of Parsley (Chopped).
- 1 Cup Of Rice (Uncooked).
- 3 Cups Of Chicken Broth.
- 2 Cups Of Water.
- 1 Tsp Of Paprika.
- 2 Tbsp Of Triunfo Olive Oil Salt And Pepper (To Taste).
Directions:
- Sauté chouriço, garlic, and onion in olive oil until onion is limp.
- Place chicken breasts in the bottom of a large casserole dish.
- Mix all the remaining ingredients together including the rice and the sautéed chouriço and add it to the casserole.
- Bake in a 350 F oven for one and a half hours, stirring twice.
- Add more broth if mixture becomes too dry.
