Portuguese Chicken Basque

  • 4 Corte’s Chouriço Caseiro Links (Sliced Into Thin Slices).
  • 2 Large Chicken Breasts (Split And Skinned).
  • 3 Cloves Of Garlic.
  • 2 Red Peppers (Sliced).
  • 1 Large Onion (Chopped).
  • 4 Tsp Of Parsley (Chopped).
  • 1 Cup Of Rice (Uncooked).
  • 3 Cups Of Chicken Broth.
  • 2 Cups Of Water.
  • 1 Tsp Of Paprika.
  • 2 Tbsp Of Triunfo Olive Oil Salt And Pepper (To Taste).


  • Sauté chouriço, garlic, and onion in olive oil until onion is limp.
  • Place chicken breasts in the bottom of a large casserole dish.
  • Mix all the remaining ingredients together including the rice and the sautéed chouriço and add it to the casserole.
  • Bake in a 350 F oven for one and a half hours, stirring twice.
  • Add more broth if mixture becomes too dry.
