This Mixed Berry Cheesecake brings together a crunchy cookie crust, a light, velvety cream and a vibrant topping of strawberries, raspberries and blueberries. Fresh and balanced, it is the perfect way to end any meal. A simple, elegant dessert made for sharing.
Ingredients
Crust
150 g (5 oz) Maria cookies
100 g (7 tbsp) melted butter
Cream
250 g (9 oz) requeijão (fresh Portuguese whey cheese)
200 ml (¾ cup + 1 tbsp) heavy whipping cream
100 g (½ cup) sugar
7 gelatin sheets
4 tbsp milk
Vanilla extract, to taste
Topping
500 g (1.1 lb) mixed berries
3 tbsp sugar
Lemon zest, to taste
6 gelatin sheets
Vanilla extract, to taste
Instructions
Crush the cookies and mix them with the melted butter. Line the bottom of a springform pan and press firmly into an even crust. Refrigerate for 30 minutes.
Make the topping by heating the berries with the sugar, lemon zest and vanilla. Blend until smooth and stir in the soaked gelatin.
For the cream, beat the requeijão with the sugar. Add the gelatin dissolved in warm milk and mix well.
Whip the cream to soft peaks and gently fold it into the cheese mixture.
Pour over the chilled crust and refrigerate again until it starts to set.
Finish with the berry topping and let it set for at least 3 hours, ideally overnight.
Garnish with fresh berries before serving.
Tip
Make the cheesecake the day before. A full night in the refrigerator gives it an even firmer, creamier and more flavorful texture.
