Directions
Desalt the codfish (to taste). When ready, boil the codfish and the washed eggs together for 12 minutes. Place eggs in a bowl of cold water. With a fork,flake the codfish and discard bones and skin.
Wash the unpeeled potatoes, cut them in half and cook them in the same water used to cook the cod. Drain them, allow them to soften, remove the skin, mash potatoes with hand held immersion blender. Pour potatoes into a bowl, add the hot milk, season with lemon juice, nutmeg, salt and pepper to taste and stir well.
Peel and wash the onions and garlic cloves, cut the onions into half moons and chop the garlic. Heat oil in a pan, then add the bay leaf, onion and garlic and cook until golden. Remove from the heat, add the cod, season to taste and mix everything together.
On a Pyrex dish, spread the mashed potatoes and top with the cod mixture.Peel the boiled eggs, cut them into slices, arrange them on top on cod mixture and roast in a preheated to 200ºc oven until golden. Remove from the oven,sprinkle with chopped cilantro and serve.
