Ingredients

• 1 Red Snapper.

• 5 Large Idaho Potatoes.

• 2 Onions.

• 4 Peeled Sliced Tomatoes.

• 200 ml Quinta Do Vale White Wine.

• 5 Garlic Cloves.

• Juice of 1 Lemon.

• 100 ml Triunfo Olive Oil.

• 1 Tablespoon Paprika.
-
• 1 Tablespoon Coarse Salt.

• 1 Teaspoon White Pepper.

• 2 Bay Leaves.
-
• 1 Sprig Of Parsley.
Directions
In a bowl, combine the wine, chopped garlic, tomato, salt, pepper, lemon juice, olive oil, bay leaves, chopped parsley and paprika. Reserve.
Peel and cut the potatoes into slices. Peel the onions, cut them into slices and spread the larger ones on an oven tray. Make three slits on each side of the fish, place the fish in the the tray and arrange the potatoes around the fish.
Season the fish and potatoes with the initial mixture. Place the remaining onion on the fish and bake in a preheated to 185ºc oven for about 40 minutes. Remove from the oven and serve immediately.
