Directions
Preheat the oven to 180º C.
Cook the cod loins in boiling water, being careful not to over cook.Remove from heat and set aside.
After cooling slightly, remove the skin and bones and break loins into chunks. Reserve.
Wash the cabbage well, cut into thin strips and bake in the cod water8 to 10 minutes. Drain well after cooking.
Cut the onion and 2 cloves garlic into thin slices and lightly sauté in a frying pan with 4 tablespoons of olive oil. Add sweet pepper, cod and baked cabbage,mix very well.
With a very sharp knife, open a lid on the top of the broa and scoop out all the crumbs. Add it to the prepared cod, onion and cabbage mixture.
Grind the seasonings and place the prepared cod mixture inside the broa,closing it with the broa lid.
Bake at 200°C for 5 minutes.
Remove from the oven, remove the lid, sprinkle with a mixture of 2 tablespoons of hot oil, 1 garlic and finely chopped cilantro.
